Bread Pumpkin 

 

2 cups sugar

1 cup brown sugar packed

1 cup oil

4 large eggs

1 (15 ounce) can of pumpkin

3 ½ cups flour

2 teaspoons soda

1 ½ teaspoons salt

½ teaspoon cloves

1 ½ teaspoons cinnamon

1 teaspoon allspice

1 teaspoon nutmeg

⅔ cup water

1 cup chopped walnuts or pecans

2 tablespoons brown sugar


   Preheat oven to 350*. Grease and flour 2 loaf pans. 

   Mix together the sugars, oil and eggs. Mix in pumpkin. Mix together the dry ingredients and then add to the wet mixture. Add water and stir until just moistened. Stir in the nuts.

Cream Cheese filling:

8 oz cream cheese (room temperature or softened slightly)

4 tbsp sugar

1 egg

2 tsp flour

1 tsp vanilla


Cream Cheese Layer:

In another bowl either for your stand mixer or hand mixer combine all ingredients until smooth.

   Bread Assembly:

Pour or spoon half of the pumpkin bread mixture into the bottom of the loaf pans. 

   Evenly divide the cream cheese mixture over the pumpkin bread mixture and smooth out using the back of a spoon

   Pour the remaining pumpkin bread mixture over the cream cheese mixture, covering as much as you can

   Sprinkle a Tablespoon of brown sugar, over the top of each loaf.

Bake for 55-60 minutes, or until a toothpick comes out clean. Cool 10 minutes, then remove from pans
